 2 Bananas, sliced into ¼-½" slices
 1 tsp Cinnamon
 2 cups Oats
 1 ½ cups Milk of choice (I use unsweetened almond milk)
 ¾ cup Berries (blueberries, blackberries and strawberries work well)
 3 tbsp Chia or Flax Seeds
 1 tsp Baking Powder
 1 Egg
 ½ tsp Salt
 ¼ cup Plus 2 tablespoons of Brown Sugar
 Yogurt or honey to top, optional

Preheat oven to 375 degrees. Spray the bottom of a 8x8 or 9x9 baking dish with non-stick cooking spray.

Place sliced bananas in the bottom of the baking dish. Sprinkle with cinnamon, bake for 5 minutes.

Combine remaining ingredients, except for 2 tablespoons of brown sugar. Let the mixture sit for about 4-5 minutes so that the chia seeds can absorb some of the liquid and soften.

Pour the mixture over the top of the bananas and cinnamon and sprinkle the remaining brown sugar over the top of the oatmeal.

Bake at 370 degrees for about 45 minutes, until the oatmeal is set and cooked through. Serve warm, or place into the refrigerator and reheat as desired. Top with yogurt or honey if desired. Enjoy!
