Pumpkin cake mix cookies
Have you ever made cake mix cookies before?
Cake mix cookies are one of my favorite mom hacks. My oldest daughter loves spending time in the kitchen with me. She’s only 4 years old, so cake mix cookies are perfect for her. There is way less mess and it’s simple enough to hold her attention span.
These pumpkin cookies use a spice cake mix, a can of pumpkin, and a teaspoon of pumpkin spice to make a rich, cakey cookie that isn’t sickeningly sweet. I frosted them with a simple cream cheese frosting, but that is totally optional. I think it just gives them a little extra pizazz.

What you’ll need
These cookies have just three ingredients, and the frosting has another three ingredients. It doesn’t get easier!

For the cookies, you’ll need:
- Spice cake mix
- A can of pumpkin (not pumpkin pie filling!)
- Pumpkin spice
For the frosting, you’ll need:
- A block of cream cheese
- Powdered sugar
- Milk
To make the cookies, you can just use a bowl and a spatula. It mixes together in just a few minutes! To make the frosting, I recommend using a hand mixer or stand mixer. You can mix it by hand, but it will take a bit more effort.
These pumpkin spice cookies are perfect for a Halloween party, as a Thanksgiving dessert, or even for a lazy Sunday treat. Your family will love them, and you can relax knowing it didn’t take up a whole afternoon or make a huge mess of your kitchen.
Enjoy!
