This recipe…I kid you not…came to me in a dream. I was about 7-8 months pregnant with A, and woke up at 6am dreaming of a baked oatmeal. I don’t think I had eaten baked oatmeal in years, but I needed it that morning. My husband could not have been happier waking up to the delicious smells of this oatmeal that morning.
Oh my gosh, it did not disappoint. And since then it’s been a staple in our house! It’s a weekend treat that my husband and kids love. The first time I made it, we ate the whole, entire pan. E, who was about 15 months old at the time, ate 2-3 servings! Nothing makes me happier than my toddler asking for more of something healthy to eat!
The trick to this recipe is baking the bananas with cinnamon for a few minutes before adding the remaining ingredients. This recipe also uses an egg, which helps make it a little like cake and gives it great texture.
I like to divide the sugar in the recipe, so that a few tablespoons of brown sugar go on top. It makes a hard sugary top that is just delicious. Hearing my fork break through the crunchy topping is one of my favorite parts.You could swap out the brown sugar for honey, too. I chose not to do this so that the baby could have some, since infants under 1 year old should not have honey.
I love how easy and versatile this recipe is. I’ve used all kinds of berries, I’ve added protein powder or peanut butter…I’m sure I’ve added chocolate chips once or twice too, because who doesn’t love chocolate for breakfast. The hardest part of this recipe is waiting for it to finish baking. It’s SO good.
This time I used blueberries and blackberries because that’s what I had on hand. It was amazing! You could top this with a drizzle of honey, a dollop of yogurt, or eat it plain. You can’t mess it up!
It makes a great leftover too! If you haven’t noticed yet, we love leftovers in this house.

Preheat oven to 375 degrees. Spray the bottom of a 8x8 or 9x9 baking dish with non-stick cooking spray.
Place sliced bananas in the bottom of the baking dish. Sprinkle with cinnamon, bake for 5 minutes.
Combine remaining ingredients, except for 2 tablespoons of brown sugar. Let the mixture sit for about 4-5 minutes so that the chia seeds can absorb some of the liquid and soften.
Pour the mixture over the top of the bananas and cinnamon and sprinkle the remaining brown sugar over the top of the oatmeal.
Bake at 370 degrees for about 45 minutes, until the oatmeal is set and cooked through. Serve warm, or place into the refrigerator and reheat as desired. Top with yogurt or honey if desired. Enjoy!
