Valentine’s day is fast approaching! These Valentine’s Day cookies are so easy, and very easy to customize. In this post I’ll show you my three favorite ways to jazz them up, but you can get creative at home.
I love cake mix cookies. I’ve made this recipe for Strawberry White Chocolate Cake Mix Cookies for baby showers, but they work perfectly for Valentine’s Day, too! I also decided to make red velvet cake mix cookies, because who doesn’t love red velvet, and they are perfectly on theme!
My daughter loves to help me bake. She is an expert at swindling me into baking cookies with her, and if I’m being honest, I let her! I love the memories we make in the kitchen together, and cake mix cookies are perfect for involving your kids in the kitchen because:
- They’re inexpensive
- They’re super easy to make
- There aren’t a lot of ingredients involved (so they won’t get bored halfway through and leave you to finish alone!)
- There are endless varieties and combinations

On this particular day, we made these cookies three different ways. We mixed each dough up separately, divided them by three, and added our mix-ins.
We decided to use:
Chocolate Chips
White chocolate chips are amazing in these cookies! You could use any kind of “chip” but I really love the look of the white chocolate.
Dark chocolate into the strawberry cookies would be amazing…or even better, dip your cookie right into the chocolate! It’s like a chocolate covered strawberry cookie (if you try this, let me know!)
Sprinkles
An important thing to remember sprinkles is that your cookies will only taste as good as the sprinkles you use! Ours were a bit expired, so they had a little plastic-like taste to them.
You can either mix the sprinkles right into your dough, or you can roll the dough into balls and then roll them through the sprinkles. We chose to roll the dough in the sprinkles, but the other way works great, too.
Hershey Kisses
Make these “blossom” style! We found Valentine’s Day Hershey “Hugs” at the grocery store, and they turned out really cute!
This was our favorite way to eat these cookies. They look so fancy (and difficult to make!), but are actually so so simple!
Other variations:
- Roll the dough into coconut
- Dip the cookies into chocolate (get fancy with different colors of melting chocolate if you desire!)
- Cover them with frosting (a cream cheese frosting would be amazing on the red velvet cookies!)
- Mix in toffee bits, marshmallows, peanut butter chips, etc.
- Drizzle with caramel, chocolate, or marshmallow

Recipe:
The recipe is the same for either cookie:
Start with a box of your favorite cake mix. It can be any flavor you choose!
Add 2 eggs and ½ a cup of oil.
Mix in anything you want (or they’re delicious plain!) and bake for 6-8 minutes, until edges are slightly brown but the cookies are still soft.
