My husband and 2 year old are very…passionate…about weekend breakfast.
Both of them loveeee to go out to breakfast, and I’m often pleading for a breakfast at home in my pajamas.
Pancakes are the usual go-to, along with Baked Oatmeal, but this weekend we decided to try out our new waffle maker!
Our first waffle maker was a wedding gift and we used it pretty frequently. However, it was 4 years old (I can’t believe we’ve been married four years already!) and ready for an upgrade.
We chose this one from Hamilton Beach. I have to say, I reallllllly like it! It has removable, dishwasher safe plates which was a HUGE bonus for us. Let’s face it — we have enough dishes already with two little ones! We don’t need to be fussing with the grooves and nooks of a waffle maker.
It also did a really good job of making the waffles crispy on the outside while still fluffy inside. There are a few different settings for the heat so you can adjust to your taste. I also love when waffle makers flip over like they do at hotels. It makes me nostalgic!
Anyyyywayys, enough about the waffle maker!
My husband ALSO loves pumpkin. His dad always added canned pumpkin and pumpkin spice to his pancakes and waffles growing up, so it’s something he loves to do at our house, too.
These waffles are moist and fluffy with a nice spiced flavor. They’re perfect for a fall treat, and are a great change-up to plain waffles.
I recommend topping with maple syrup, though honey, whipped cream or caramel would also be amazing.
I think everyone had a nice, full, warm belly after this breakfast. It’s no wonder my kids get excited when they hear we’re having waffles!

Stir together all dry ingredients (flour, sugar, baking soda, baking powder, salt and spices) in a separate bowl.
Beat eggs, honey, milk, butter and pumpkin until smooth. Add dry ingredients slowly to wet ingredients, whisking constantly until well incorporated.
Spray a hot waffle iron with non-stick cooking spray. Pour batter into waffle iron, and cook until fluffy (follow manufacturer's instructions to ensure adequate cooking time).
Top with warm maple syrup and a dollop of butter. Enjoy!
