I love cake mix cookies. I first found them about 2 years ago when planning a sprinkle for my sister-in-law. They’re cheap, easy, quick, and don’t make a huge mess. It was great to make 3-4 different kinds of cookies in just a few hours with minimal mess.
If you’re not the world’s best baker, these cookies are for you. They are really, really hard to mess up!
I’m attending a baby shower tomorrow for a coworker, and she’ll be welcoming a baby girl in just a few weeks! I’m so excited for her, and wanted to make something pink to celebrate her daughter. After a busy day of cranky kids, I whipped up a batch of these cookies to bring.
The magic of cake mix cookies
Cake mix cookies use a boxed cake mix and a few other ingredients to form a cookie dough. Typically eggs, oil and a mix-in (usually chocolate chips or sprinkles) are all you need in addition to cake mix to make cookies.
Its a very easy, cost effective way to make about two dozen cookies fast.
I’ve made several versions of cake mix cookies in the past. The rest of the recipe stays the same, just the mix-ins and cake mix changes.
I’ve done chocolate cake mix with mint chips, white cake mix with sprinkles, and red velvet cake with white chocolate chips. They always turn out great, and it’s so easy to make exactly what you want!
These chocolate chunk cake mix cookies and these pumpkin spice cake mix cookies are absolutely dreamy.
