We were in a predicament tonight…we were going to have Coconut Curry Butternut Squash Soup for dinner, but we didn’t want to run to the bakery for fresh bread due to the COVID-19 crisis. I dug through the pantry, and came up with this cheesy garlic bread.
What good is soup without warm bread to dunk in it?! None!
Thankfully, I always have the ingredients of this bread on hand, so now that I know the recipe *works* (and is amazing, by the way), we’ll be serving this up on the regular!

I was trying to come up with a yeast-free recipe, since I realized the bread dilemma at about 5:30PM and didn’t want to wait until 9pm to eat dinner. This makes the recipe so quick and easy! I threw the bread together and in the oven, made the soup, and they both finished at the same time. It was a delicious and easy meal that my husband and I both loved.
I’m (not) proud to say that the entire loaf is gone. Done-zo. Between me, my husband and kids, it lasted about 45 minutes. Oops! Next time I’ll know to double the batch so we can have leftovers.
You don’t need any special ingredients or tools to make this bread. A few bowls and a simple loaf pan is all that you’ll need!
Does it matter what kind of cheese I use?
Nope! I used mozzarella because that’s what I had on hand. Any kind of shredded cheese will be fine.
Can I use a self-rising flour?
I’d be careful with that, as the recipe already has baking soda and baking powder in it. AP flour worked great, but if you try self rising let me know how it went for you!

In a large bowl, combine all dry ingredients and stir until combined.
Combine wet ingredients in a separate bowl and whisk together until combined.
Slowly add wet ingredients to dry ingredients, mixing until well incorporated. The dough will be wet.
Pour mixture into a greased 9x5 loaf pan. Bake in a 350 degree oven for 35-40 minutes, until the loaf is cooked through and the tops and sides are lightly browned.
