Yields1 Serving
 4 chicken breasts
 1 can of black beans, drained and rinsed
 1 can of corn, drained
 16 oz jar of salsa (any kind)
 1 can Rotel tomatoes with chiles
 1 tbsp cumin
 1 tbsp chili powder
 ½ tbsp paprika
 1 tsp salt
 1 cup quinoa, rinsed
 shredded cheese, avocado, olives, sour cream, cilantro, guacamole, etc for topping

Cover the bottom of the pressure cooker with salsa, place chicken breasts on top of salsa. Pour the beans, corn, tomatoes, and spices over the top of the chicken. Stir to coat the chicken and veggies with spices, but keep the chicken breasts on the bottom of the pressure cooker.

Close and lock pressure cooker lid. Set the valve to seal. Set the pressure cooker to HIGH for 15 minutes.

When the timer goes off, allow the pressure cooker to do a natural release for 5 minutes, and then release the pressure the rest of the way.

When the pin drops, remove the lid. Set the pressure cooker to sauce, and add the quinoa into the pressure cooker. Allow to cook for 15-18 minutes, until quinoa is soft and cooked.

Top with your favorite toppings, and serve warm. Enjoy!
